Margie’s Mayonnaise

  • 4 egg yokes
  • 300 mls olive oil
  • salt and pepper to taste(1/2 t each)
  • 1/2 your sugar choice
  • 1 t French mustard
  • juice of one lemon
  • splash of tarragon vinegar(optional)



  1. with whisk and stainless steel bowl stir eggs till smooth
  2. add salt, pepper,  sugar and mustard
  3. stir till blended
  4.  support bowl with dishcloths so it does not move
  5. keep stirring as you add olive oil drop by drop
  6. as it thickens add some lemon juice
  7. keep stirring till all lemon juice and all olive oil is added
  8. bottle label and refrigerate

  • only stir in one direction to prevent it curdling
  • add olive oil drop by drop, especially initially
