Soy Bean Soup / Dip – “Lazy Tofu”

I learned to make this yummy dish when living in China from May Sun.

Benefits of eating chilies:

  1. boosts immunity
  2. fights inflammation
  3. helps relieve pain
  4. clears congestion
  5. assists cardiovascular function
  6. helps stop the spread of prostate cancer
  7. prevents stomach ulcers
  8. lowers the risk of type 2  diabetes

Ingredients:

  • soya bean (we pulled them from the fields but one packet off frozen beans will work)
  • 2 chilies
  • 2 desert spoons Sichuan oil with Sichuan peppers
  • water to cover
  • 3 cloves of garlic

Method:

  1. bring beans to the boil simmer for 10 minutes
  2. transfer beans and water to blender
  3. add chilies (seeds and all) and oil
  4. blend till smooth
  5. In hot wok with coconut oil add garlic through the press cook for 1 minute
  6. add soya mixtyre cook for 1 minute on high
  7. add chopped chives / garlic chives / shallots whatever is to hand
  8. Serve hot or warm as soup or dip
